Sweet Potato and Bean Burritos

Made these lovely burritos last week and they turned out great.  R. loved them so much he ate most of it!  I had found this recipe a while back on Allrecipe.com (called "Addictive Sweet Potato Burritos") and thought it sounded interesting, though I prefer to refer to them as "Sweet Potato and Bean Burritos" because there are proportionately more kidney beans than sweet potatoes.  The flavor comes mostly from the bean mixture; the sweet potatoes are almost relegated to "accompaniment" status.  and if toasting the burrito in the oven is a fabulous idea, then deep frying it is simply ingenious.  I liked both versions, but personally prefer the burritos deep fried.  The recipe yields 12 servings, which was a bit much for just the two of us. Next time I'm going to half it, maybe even third it.

The flatness of the burritos is a result of my not knowing how to
properly wrap burritos, although I think it turned out to be easier to eat
with a fork and knife this way.  The burritos come out real hot, so eating
them with your hands is not recommended!
